Our first Mozzarella production dates back to January 1957. At that time our tools were still old-fashioned, consisting of wooden troughs and instruments, and stone fireplaces. All operations were carried out manually. Great professionalism was necessary to obtain prime quality products. No improvisation was permitted.
A lot has been accomplished since then, but always respecting tradition. We have only introduced machinery as a substitute to manual labor in the areas that required repetitive actions, while our expert cheese makers have remained in charge of product preparation and quality control. This automated yet traditional process allows us to give “personalized” products to different customers, and ensures that our products and our company remain leaders in the market.

Slight differences in the quality of our products are possible, from time to time. This is the typical ”flaw” of handcrafted products, yet at the same also the clearest indication of their quality.

Our production structure allows us to be very competitive with prime quality products and potentially able to satisfy almost any kind of request. Still, the hallmark of our production has remained hand-made by choice. All our products are carefully inspected by our experts to ensure compliance with health regulations and complete respect of traditions.

Over time, our activity has focused particularly on the production of mozzarella of all sorts: for pizzas, for home recipes, mozzarella cherries for snacks, and brick loaves.
As natural complements, our products also include typical white scamorzas, smoked provolas, burratas, mascarpone, tosella and a full choice of fresh and smoked ricottas.

Through the expertise acquired in over half a century, the passion for our work and the will to always supply our customers with genuine and top-quality products, we have become a highly recognized company, both nationally and internationally, and we were able to enter markets which would have been unthinkable to our company's founder, Giuseppe Abbasciano, fifty years ago, such as Austria, France, Germany, the United Kingdom, Sweden, Mauritius and Japan.
