Radicchio mousse

Ingredients: Salt, coriander, 100 g of red radicchio, 200 g of Ricotta alla Pugliese Abbasciano, black pepper, 30 ml of cream, 10 ml of grappa.

How to make it: Wash the red radicchio, dry it completely, cut it into thin strips and put it into the mixer. Add the ricotta, cream, salt and mix for 30 seconds. Add pepper, grinded coriander if you wish, a drop of non aromatized grappa and mix for 2 more seconds. Put it into the fridge until you serve it.
